The Weisbarth's had an exciting but intense last 6 months. Two new jobs, too many work trips to count, our boy JRW turned 2 and oh yeah we're moving into a new house. But the comfort in all of this... whenever we're together, wherever we are, it feels like home.

End of Summer Salad - Lemon Mint Orzo
A friend brought this lemon mint pasta salad to a BBQ we hosted a couple weeks ago and it was a big hit so I had to share this easy peasy lemon squeezy recipe:
Ingredients:
- 1 pound orzo pasta
Ingredients:
- 1 pound orzo pasta
- 2-3 lemons, juice
- 1/2-1 cup EVOO
- Zest of 2 lemons
- Handful of fresh mint leaves, chopped
(can also substitute basil or use both)
- Crumbled feta cheese, to taste
- Salt, to taste
Very rough instructions:
Cook orzo pasta as directed in water. Drain. Let cool. Add pasta to a big bowl whisk in juice of 2ish lemons and about a 1/2 cup olive oil. This can get tricky, shouldn't be too lemony that your taste buds pucker! Add zest of 2 lemons. Toss chopped mint leaves into pasta salad, crumbled feta and salt to taste.
Note: Sorry these are the worst recipe instructions of all time.

Toddler Trickery - The Magic Lunchbox
Jake turns two next month and I'm already seeing glimpses of what's in store. Great stuff like a language explosion and the tough stuff like crazy kicking & screaming for little or no reason.
To avoid the tough stuff I've started gathering ideas from other parents on how to steer Jake away from crazy town before he gets there.
One strategy I learned from a mom with multiple kiddos is the magic lunchbox. I fill it with small toys that open and close, spin, buttons, reading material, a small snack, etc and the lunchbox only shows up once in awhile to make it special.
It can really change his whole mood and it buys this mama anywhere from 15 min to an hour of independent play (and maybe a glass of wine for this lady). Most of these tiny toys I've collected on trips to Target.
Ideas - Small books, Superman key, finger puppets, small cars, a few Legos, flash cards, small bottle of bubbles, a spiny wand thingy.
