Currently obsessed with...

Too lazy to take a picture of this salad.
So here is a picture of Tonya & I circa 2006
trying to bring sexy back.
... this salad I forced my friend Tonya to bring over every week since our munchkin was born. I finally asked for the recipe since I was running out of excuses for her to make it for me. Lucky for me its super easy to make!

Tonya's Go-To Salad

(Warning you'll have major garlic burps so don't eat this before a hot date or a job interview)

Ingredients:
Lots of arugula (or spinach if you prefer)
1 golden delicious apple
1 fresh baguette or a nutty loaf
Shredded parmesan cheese to taste (optional)

Dressing:
2-3 tablespoons olive oil
2-3 tablespoons balsamic vinegar
1 lemon
1 clove of garlic (if the clove is huge, use half-ish)

Cut up the bread into cubes. Just toast it in the oven or if you want to get fancy make these croutons. Combine arugula, apple, croutons and cheese. For the dressing, in a jar combine olive oil, balsamic vinegar, squeeze out the juice of the lemon and chop up the garlic as finely as you can and add to the jar. Shake it up. Then toss the dressing in the salad. That's it!

    1. You think this is The City? My guess is we're in Madison for the SDSU vs UW game and we're near that pool table in the back of the KK.
