Stephanie's Lettuce Wraps

We got super lucky finding our nanny Stephanie...she's kind've a modern day Mary Poppins. She looks a little bit like her, has a beautiful singing voice and comes to our house with a bottomless bag of things that make Jake giggle. Oh and she can also cook! She made us these lettuce wraps and now its become one of our go-to dinner recipes.

Stephanie's Lettuce Wraps


Ingredients:
1 lb ground chicken or turkey
1 red onion diced
3-4 garlic cloves chopped finely
1-1 1/2 inches of ginger root chopped finely
1 tbsp sesame oil
2 1/2 tbsp soy sauce
2 tbsp peanut butter
3/4 tbsp honey
1 tbsp + 1 tsp rice vinegar
2 tsp chili garlic sauce or sweet chili sauce
3-4 scallions (green onions) chopped
1 can sliced water chestnuts chopped
1 head of bib lettuce
1-2 cups of basmati rice
salt and pepper to taste

Instructions:
In a skillet heat a tbs of olive oil, add onions and sauté till softened. Add garlic and ginger. Add ground chicken or turkey, mix together, add pinch of salt & pepper and cook till brown but not done all the way. Add sauce ingredients: sesame oil, honey, soy sauce, peanut butter, rice vinegar and chili sauce. Can add water if need to thin out the sauce a bit. Add green onions and water chestnuts to heat them. Serve with basmati rice and fill bib lettuce leaves.
