End of Summer Salad - Lemon Mint Orzo

A friend brought this lemon mint pasta salad to a BBQ we hosted a couple weeks ago and it was a big hit so I had to share this easy peasy lemon squeezy recipe:

Ingredients:
- 1 pound orzo pasta
- 2-3 lemons, juice
- 1/2-1 cup EVOO
- Zest of 2 lemons
- Handful of fresh mint leaves, chopped
(can also substitute basil or use both)

- Crumbled feta cheese, to taste
- Salt, to taste


 Very rough instructions:
Cook orzo pasta as directed in water. Drain. Let cool. Add pasta to a big bowl whisk in juice of 2ish lemons and about a 1/2 cup olive oil. This can get tricky, shouldn't be too lemony that your taste buds pucker! Add zest of 2 lemons. Toss chopped mint leaves into pasta salad, crumbled feta and salt to taste.

Note: Sorry these are the worst recipe instructions of all time.
