Polenta Please

So I've never really known what to do with polenta but I always like it when it comes in some fancy pureed or cake form at restaurants. Well, last week our favorite neighbors, the Binghams, brought us a gourmet dinner that included rosemary polenta cakes... HELLO, yum! So during JR's nap today I gave their simple recipe a try.



Rosemary Polenta Cakes

- tube of Trader Joe's Polenta
- small amount of olive oil
- shredded Parmesan cheese for sprinkling
- chopped up rosemary for sprinkling



Thinly slice polenta from the tube. Heat up pan on medium heat, add small amount of olive oil till its warmed up. Add polenta cakes and pan fry each side till golden brown. Keep cakes in pan, sprinkle rosemary and cheese on top, cover till cheese is melted.

PS - This polenta recipe also sounds good.
